Pumpkin Spice Overnight Oats
Want a quick and easy breakfast on the go? Try out this healthy recipe...no baking required!
Ingredients:
1/2 cup milk of your choice (I recommend almond or coconut milk!)
1/2 cup gluten free rolled oats
2 tablespoons pumpkin puree
1/4 tsp pumpkin pie spice
1/4 tsp vanilla extract
2 tsp pure maple syrup (or honey!)
1 tablespoon chopped nuts (I prefer walnuts or pecans)
sprinkle of dried cranberries (no added sugar, please!)
Instructions:
In a mason jar combine milk, oats, pumpkin puree, pumpkin pie spice, vanilla, and maple syrup
Mix until completely combined
Put lid and refrigerate overnight (or for approximately 8 hours)
In the morning, stir and add extra milk if needed for consistency
Sprinkle cranberry and nuts on top
Bonus points if you throw some dark chocolate on top ;)
